
Pistachio-Crusted Chicken

Ingredients
2 boneless chicken breasts, sliced in half
sea salt and pepper to taste
1 egg white
1 cup unsalted pistachios, chopped
3 Tbsp olive oil
1 Tbsp fresh parsley, chopped
Directions:
Preheat oven to 400 degrees F / 204 degrees C.
Season chicken breasts with sea salt and pepper.
In medium bowl, beat egg white until frothy.
Dip chicken into egg white mixture, then coat with pistachios crumbs.
In oven-safe skillet, heat olive oil over medium-high heat.
Add coated chicken to skillet and cook for about five minutes on each side or until golden brown.
Transfer skillet to oven and bake for 10 to 15 minutes, or until internal temperature of chicken reaches 165 degrees F / 74 degrees C.
Remove from oven and let rest for five minutes, then garnish with parsley before serving.
Recipe tips:
Use a food processor or rolling pin to crush pistachios into small, fine pieces.
Add garlic powder, onion powder, or Dijon mustard to the egg-white mixture for added flavor.
